Vanilla peach overnight oats

My breakfast of choice is oats with diced fruit and cinnamon. Yes, every morning. No, it doesn’t get boring. It’s a nutritious way to start my day, satisfies my ever present sweet tooth, and keeps me going for hours until my appetite kicks in again. These overnight oats mean there’s less to do on hectic mornings – simply take the jar out of the fridge and dig in.
Feel free to add your choice of fruit – diced banana, blueberry, chopped nuts and seeds will all enhance both the taste and nutrition factor of this power breakfast.
1 cup raw oats
1 cup skim milk (or nut milk)
1 scraped vanilla bean pod (save the beans)
1 ripe peach
Dash of cinnamon
1 teaspoon golden flaxseed, optional
